Ground Control was created as an advisory business to support the Hospitality, Leisure and Travel Retail sectors. We focus on concession planning and selection, F&B Management and strategies to grow aspiring brands. Our services cover the entire spectrum across food and beverage, including Master Planning, Tender Preparation and Management as well as brand support.

Our goal is to turn F&B dreams into reality. Leveraging over 50 years of industry experience, we provide practical solutions that deliver world-class customer experiences as well as profitable, sustainable growth for all partners.

Spearheaded by Adam Summerville and Kevin Zajax, the Ground Control team include experts in Marketing and Research. Ground Control also engage specialist design consultants to bring to life their own and their clients visions.

With over 30 years in Hospitality, Adam has a wealth of experience unique to Australia in this space. Adam has run his own restaurants and bars as well as holding senior roles with multi-national companies in the food services sector. His in-depth understanding of operations as well as brand and concept mix has led to global recognition in the industry. His current work with Marvel Stadium looks to revolutionise the way that event venues are used in Australia.

Kevin’s career has seen him lead and drive change across a variety of industries including fast-moving consumer goods (FMCG) and F&B. Originally from Australia, he spent the last 11 years living and working in Dubai before moving to Singapore earlier this year. Kevin’s responsibilities for all facets of running a business, as well as his experience on boards and councils gives him a unique perspective on bringing stakeholders together to create world-class outcomes.

Adam and Kevin recently completed over 20 years with Emirates Leisure Retail (Adam as Managing Director, in Australia; Kevin as Chief Operating Officer, in Dubai). Together, they drove the ELR business and, in the words of many, disrupted an industry.

They were responsible for over 300 F&B outlets across the Middle East, Asia, Australia and New Zealand and played key roles in securing and delivering game-changing dining experiences – notably at Dubai International Airport’s newest concourses (A & D), Sydney International Airport, Auckland Airport and Changi International Airport (Singapore). With over 40 global awards under their stewardship, Adam and Kevin know what it takes to deliver exceptional results.
